Preheat oven to 350 degrees.
Add soda to coffee, stir well and set aside.
Sift or stir all dry ingredients together.
Drain raisens, set aside. You can add some of the liquid from the
raisens, if desired; just add more flour.
Cream sugar and butter. Add eggs and beat well. Add coffee and
gradually incorporate the dry ingredients. Mix thoroughly. Add
raisens and nuts (if using them). Mix.
Drop by teaspoon unto greased cookie sheet. Bake at 350 degrees
for 10 to 12 minutes. These cookies should be like little cakes, soft
and chewy. If they spread out too much, simply add more flour. I
recommend a test run.
Cool thoroughly before storing in a container as they are very moist
and they will meld together if packaged while still warm.
