     Avocado Pie

Ingredients
Filling-
2 egg yolks beaten
1 can sweetened condensed milk (eagle brand)
2 large ripe avocados (to make 1 1/2 cups blended puree)
1/2 cup fresh lemon juice
3/4 tsp grated lemon peel
topping-
1 cup sour cream
1 tsp vanilla
 
1 tbsp sugar
crust-
1 1/3 cup finely crushed graham crackers
1/4 cup finely chopped almonds
1/4 cup sugar
1/4 cup melted butter

Instructions
Crust- Blend all crust ingredients, press evenly into 10 inch pie pan. Bake at 325 degrees oven for 8-10 minutes. Let cool
Filling- In small pan combine beaten egg yolks and condensed milk. Cook stirring all the time over medium heat until thickened. Set aside to cool. Peel, slice, and blend avocados in blender or food processer. Add lemon juice and grated peel, and puree. Add milk and egg mixture and puree until smooth, pour into crust. chill several hours.
for a topping- Mix sour cream/sugar/vanilla until sugar dissolves. Spoon over cooled pie for topping and chill until set. Slice and serve.
