     Chopped Salad

Ingredients
Butter Lettuce/Raddiccio (package from Trader Joes)
English Cucumber, 1/3 of large cucumber, chopped
Kalamata olives, pitted and chopped
Campari Tomatoes, 2 or 3 (or any other GOOD QUALITY tomato)
Red Onion, 1/4 cup chopped
Large Garlic Croutons (Trader Joes)
Lemon Juice, 1/4 cup
Olive Oil, 1/4 cup
Parmesan Cheese, finely grated (best quality you can afford!)
 

Instructions
Chop lettuce mix into small pieces. Add to bowl along with chopped English Cucumber, Kalamata Olives, Tomatoes, and Red Onion.
Mix Lemon Juice and Olive Oil in a container and shake or stir until blended together.
Pour dressing over salad, add parmesan cheese, croutons, and toss to mix.
Serving Suggestions
Serve with Rustic Neopolitan Style Margherita Pizza
