     Sheila Wagner's Christmas Spritz Cookies

Ingredients
This recipe is dough to be used in a cookie gun.
1 Cup softened butter - 4 cubes
2/3 Cup granulated sugar
3 beaten egg yolks
1 teaspoon almond extract
2 1/2 Cups of flour
1/2 teaspoon salt
Decorative sugar toppings
 

Instructions
With an electric mixer cream butter & sugar. Add egg yolks and almond extract. Blend. Add flour & salt. Blend.
Fill cookie gun with dough and shoot on to un-greased cookie sheets - or cookie sheets lined with parchment paper. This process can be a dicey one - it requires that the dough be the right consistency and that you use just enough dough for each cookie. If you find that you're having difficulty with the dough - you can remove the dough from the gun and add small amounts of flour or put dough in refrigerator for 10 minutes or so.
After cookies have been formed sprinkle with decorative sugar toppings. Bake @ 350 for approximately 10 minutes or until golden brown on the edges. Cool on the cookie sheet or on racks or parchment paper.
