     Ratatouille

Ingredients
3 tbsps. olive oil, or you can use chicken stock for low-fat version
1 med onion chopped
1 green or yellow bell pepper chopped
1 eggplant - peeled and diced
4 medium zucchini - diced
2-4 gloves garlic put through a press
1 tsp. dry basil (add oregano if you like)
 

Instructions
Sauté all of the above until the vegetables are halfway cooked and then add-
2 14 oz. cans diced tomatoes flavored with basil, & garlic (tomatoes come flavored all different ways these days)
Cover with lid and sauté until vegetables are finished cooking.
This is good in tortilla wraps
