     Oven Fried Chicken

Ingredients
1 tube soda crackers
1/2 tsp. poultry seasoning
1 tsp. Italian seasoning
1 1/2 cups flour
Salt and pepper to taste
3 eggs
Small amount of milk
3/4 cube of margarine
 

Instructions
Finely crush one tube of soda crackers in a plastic bag. Add 1/2 tsp. poultry seasoning and 1 tsp. Italian seasoning, shake well and pour into bowl. In the same bag add 1-1/2 cups of flour, add salt and pepper. Beat 3 eggs, adding a small amount of milk.
Skin the chicken pieces, shake in the bag of flour, dip in the egg mixture and then in the cracker crumbs. Place chicken pieces on a rack in a shallow pan. Melt 3/4 cube of margarine and drizzle one half of it on the chicken.
Bake at 425 for 30 minutes then turn the chicken pieces over and drizzle the remaining margarine over pieces. Continue baking for 20 minutes longer or until brown.
