     Chinese Beef

Ingredients
2 lbs. flank steak
1 tomato
1/4 green pepper
2 tbsps. olive oil
1 clove garlic
1 tsp. salt
Pepper to taste
1/4 tsp. ginger
1/4 cup soy sauce
 
1 tbsp. sugar
1 can bean sprouts
1 tbsp. corn starch
3/4 cup of water

Instructions
Cut flank steak into thin strips, across the grain of meet. Cut tomatoes in quarters. Trim away seeds and ribs of green peppers and cut into strips. Heat oil in skillet.
Add beef strips, crushed garlic, salt, pepper and ginger. Fry over high heat until brown on all side. Season with soy sauce and sugar. Cover tightly and cook slowly for 5 min.
At this point toss in tomatoes, peppers, drained bean sprouts. Bring to a boil, cover and cook briskly for 5 min.
Make a smooth paste of cornstarch and water add to beef and cook till slightly thickened, stirring occasionally.
