2 cups well-mashed bananas
1 cup sugar
1 cup brown sugar
2 eggs
1-1/2 sticks butter, melted and cooled
2 cups all-purpose flour
2 teaspoons baking soda
3 tablespoons buttermilk (or 3 tablespoons milk and 1/2 teaspoon vinegar that has been set out for 1
1 cup coarsely chopped pecans

Mash bananas with fork. Add sugar and eggs and mix until blended. Add the butter and mix well. Stir in flour and baking soda until creamy. Stir in buttermilk and fold in pecans. Sppon into two greased loaf pans. Bake at 350 degrees for 30 minutes. Remove from pan immediately and cool on wire rack. For muffins, spoon into 12 greased muffin cups and bake at 300 degrees for 30 minutes.
