Ingredients
semi boneless standing beef rib roast
 

Instructions
Place beef - fat side up - on rack in open roasting pan. Insert meat thermometer so bulb is centered in thickest part but not resting in fat or bone.
Do not add water, do not cover.
Roast in 325 degree oven to desired degree of doneness. Allow 23-25 minutes per pound for rare. Allow 27 to 30 minutes for medium. Allow 32-35 minutes for well done.
Remove roast when neat thermometer registers 135 degrees for rare, 155 degrees for medium, 165 degrees for well done. Allow roast to stand 15 minutes in warm place before carving. (375 degrees - cook for 1 hour - 30-40 minutes before serving at 375 degrees) - other recipe
