     Cobb Salad

Ingredients
1/2 head romaine lettuce
1/4 head Boston lettuce
Small frisee bunch (endive)
1/2 bunch watercress, discard stems
6 slices crisp, crumbled bacon
2 ripe avocados, peeled and cut into 1/2 inch pieces
1 skinless, boneless chicken breast, halved, cooked, diced
1 tomato, seeded and finely chopped
2 hard boiled eggs, finely chopped
 
2 tbsp chopped, fresh chives
1/3 cup red wine vinegar
1 tbsp Dijon-style mustard
1 tsp sugar
Salt and pepper to taste
2/3 cup olive oil
1/2 cup finely grated Roquefort

Instructions
In large bowl, toss lettuces and watercress together
Compose remaining ingredients of salad- chicken, bacon, avocado, egg, chives, tomato
Whisk together vinegar, mustard, salt and pepper. Add oil in slowly, whisking dressing until emulsified. Stir in Roquefort. Add sugar to taste, 1/2 tsp at a time.
