     Lemon Cake

Ingredients
WET MIXTURE
1 c. of white sugar
3 eggs
1 lemon rind ONLY
1 c. of yogurt
DRY MIXTURE
1 1/2 c. unbleached flour
2 tsp. baking powder
 
salt
1/2 c. canola oil (added separately)
GLAZE
1/3 c. lemon juice (from one large lemon)
1/4 c. sugar

Instructions
Add the dry mixture to the wet mixture and combine just enough to mix evenly. Don't over-mix.
Add 1/2 cup canola oil to the batter. Grease the loaf pan. Pour into loaf pan and bake at 350 degrees for 35-40 minutes or until done.
While cake is baking make glaze. Heat lemon juice and sugar until mixture is clear. When cake is done and cooled pour glaze over cake.
A blueberry sauce may be poured over the above cake pieces to make a very presentable dessert.
