     Beer Butt Chicken Rub

Ingredients
½ cup brown sugar
¾ Tbls Tbs onion powder
1Tbls- Paprika
2 Tbls Kosher salt
2 Tbls. Pepper
½ tsp. cayenne pepper
 

Instructions
Prepare a double layer of tin foil to protect the grill. Poor 1/4th of the beer into that tray.
Rinse chicken and dump a couple scoops of rub inside and rub around. Rub the rub all over the bird.
Put the beer inside the chicken and balance on the grill over the tin tray. Do not overheat the grill! Maintain temp at 275 and less than 300 for 2-3 hrs. coolest part of the chicken should end up at 155. Let sit for 20 min. while covered before pulling apart.
