Mix water, sweet potatos, and cinnamon together. Add pancake mix and stir until combined but lumpy.
Spray skillet or frying pan with spray, and warm over med heat. When pan is hot, add oil and spoon batter into the pan. About 1/4 cup for each pancake.
Cook until bubbles for on top of the cake about 2 to 3 minutes. Flip with spatula and cook the other side for 2 to 3 minutes.
