Preheat the oven to 400f
Scrub the potatoes and prick them all over with fork. Place them on a fouil lined baking sheet and bake until tender.
once they are cooled, cut them in half lengthwise and scoop out the insides leaving just the shell.
Mash the potato insides and mix with cauliflower puree, sour cream, margarine, garlic, salt and pepper. Spoon the mix back into the shells. Place the potatoes on the baking sheet and bake for 15 minutes. Sprinkle with cheese and bacon.
