Bring 1 cup of the water to a boil in a saucepan. Stir in rice. Remove from heat; cover and let stand 5 minutes. Meanwhile, cook egg in butter in a 10 inch skillet until set. Add onion and the rice and cook and stir over medium heat untl rice and onion are lightly browned, about 5 minutes. Combine remaining water and the soy sauce, stir into rice. Makes about 3 cups or 4 servings.
