3 1/2 cups UNflour
1/2 cup instant dry milk (or almond meal)
2 tablespoons sugar
2 teaspoons xantham gum
3/4 teaspoon salt
2 teaspoons baking powder
1 tablespoon instant dry yeast
1 1/2 cups warm water
4 tablespoons butter slightly softened or shortening
2 eggs

Grease two 8 1/2x 4 1/2-inch bread pans. (Flouring is not necessary and only makes the bread gritty.) Combine dry ingredients in mixer.
While mixing on low and warm water, butter,and eggs. Beat on hight for 2-3 minutes. (this dough thins as it beats; by the time you have beaten it for 2-3 minutes it should be like an extra thick cake batter. Use more or less water to get the right consistency.) Spread dough into prepared pans. Cover lossley with plastic wrap sprayed with cooking spray. Let rise until double in size (about 30-40 minutes).
Remove plastic wrap and bake in preheated oven at 365 degrees for 50 to 60 minutes, covered loosely with aluminum foil after the first 10 minutes.
After removing bread form ove, remove from pans to prevent a soggy bottom. Butter tops if desired. Let bread cool a little before slicing.
