Ingredients
1 cup UNflour
1/2 cup cornstarch
1/2 teaspoon xanham gum
1/4 cup sugar
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
WET INGREDIENTS
1 cup milk (or milk substitute)
 
1/4 cup canola or vegetable oil
2 eggs

Instructions
Place dry ingredients in bowl of mixer. while mixing on low add milk, oil, and eggs. Beat on high to removeany lumps.
Pour 1/8 to 1/4 cup batter onto heated griddle. (If you do them too big they will not cook all the way through before they burn.) Using the bottom of your measuring cup (or a spoon) spread batter in circle to about 1/8 inch thick.
Once bubbles are popping all over the top of the pancake, turn over and cook the other side about a minute. (Keep temperature at medium-low to prevent burning.)
Seve with syrup, jam, or whatever you like.
