Ingredients
6 med size zucchini
1/4 cup thinly slice onions
4 tbsp olive oil
2 tbsp chopped parsley
2 riped tomatoes peeled-& thinly sliced
salt & pepper
parmesean cheese
 
Instructions
Slice zucchini 1/2 inch thick, wash cook in boiling salted water till tender 15-20 min
Sautee onions in olive oil till yellow add parsley & remove from heat
drain zucchini Layer - Zucchini, Tomatoe, Olive oil mix(repeat) final top = Coarsed ground pepper & parmesean Cheese
Bake 375 30 minutes
