     Mexican Chicken Chili

Ingredients
1 lb. Chicken, diced
1 medium onion, diced
2 cans of diced tomatoes with chilies
2 cans of light kidney beans
2 cans of chili beans in hot sauce
1 can of dark red kidney beans, drained
1 packet of chili seasoning
1 tbs. butter
1 Pepperoncini pepper finely diced (optional)
 
1 diced tomato (optional)
salt and pepper to taste

Instructions
open and pour all canned items into a 7-8 quart crock-pot. turn crock-pot on warm so it doesn't start to actually cook yet.
in a medium skillet, on medium-high heat, melt butter. Add chicken, salt, and pepper then cook til done. after chicken is cooked add onion, diced tomato, and pepperoncini (if you opted to use them)and cook until onion is almost translucent. turn down to low heat and add chili season packet and 4-6 tbs. water and mix well.
add chicken mixture to crock-pot and mix in well. turn crock-pot up on low heat and cook 4-6 hours or high heat for 3-5 hours (depending on how hot you actually want it) and stir every 45 minutes to 1 hour to prevent sticking.
Serving Suggestions
nacho cheese Doritos, lettuce, onion, shredded cheddar,and sour cream. put this on top of crushed Doritos and top with other condiments for a great me
