Approximately 4 - 5 hours before serving, place the room temperature roast on a rack in a open pan for exactly 45 minutes in a pre-heated 375 degree oven. DO NOT ADD WATER; DO NOT COVER; DO NOT BASTE.

Turn oven off. Leave roast in oven with door closed for about 4 hours. Turn oven on for another 45 minutes for another 45 minutes before serving, adding 1 cup water to pan drippings for au jus). For a 10 - 12 lb roast allow 60 - 70 minutes for second period.

Roast is best carved if allowed to set 15-20 minutes after removing from oven. Therefore take roast out when thermometer registers 5 - 10 degrees lower than desired doneness.

Rare - 140 degree
Medium - 160 degree
Well done - 170 degree
