Adjust oven racks to accommodate covered roasting pan. Preheat oven to 500 degrees.
Rub butter and sprinkle salt and pepper inside cavity and on outside of turkey. Put celery, carrot and onion inside cavity.
Place turkey on a rack inside roasting pan, breast side up; add boiling water to pan. Cover and place in oven. When temperature returns to 500 degrees, bake 1 hour. Turn off oven. Do not open door until oven cools - 4 to 6 hours. Remove turkey from roasting pan; reserve pan juices. Refrigerate turkey if not serving immediately.
