Thaw pastry shell at room temperature 15 mins. Preheat oven 425F.

Heat oil in large frying pan over medium-high heat. Sauté onion and veggies until tender, about 5 mins.

Sprinkle half the cheese in pie shell. Spoon vegetables and meat on top. Cover with remaining cheese. Beat remaining ingredients together to blend. Pour oven mixture in pie shell.

Bake on lower rack of preheated oven for 10 minutes, then reduce temperature to 350F and bake for 30-35 minutes longer or until filling is set. Cool for 10 minutes then serve.
