     Grandma Meek's Oven Beef Stew

Ingredients
2 lbs. lean beef stew cubes
7 ribs celery
7 carrots
3 med. baking potatoes
2 med. onion
2 tsp. salt
1 clove minced garlic
1/2 tsp. pepper
1 bay leaf
 
2 Tbs. tapioca
12 oz. V-8 juice
1 c. red wine
1 Tbs. sugar

Instructions
Slice carrots and celery diagonally. Cut onions and potatoes into bite-sized chunks. In a Dutch oven combine all ingredients, EXCEPT potatoes
Stir to combine. Cover tightly and bake 300 degrees for 3 hours.
Add potatoes and cook 1 hr. longer. May substitute beef broth for red wine, but the flavor is not as rich.
