     Cinnamon-Sugar Mini Muffins

1 1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
6 tablespoons unsalted butter, room temp
1/2 cup sugar
1 egg
1/2 teaspoon vanilla extract
1/2 cup milk (any fat content)
For coating-
6 tablespoons of butter
1/2 cup sugar
2 teaspoons of cinnamon

Preheat oven to 350 Spray a mini muffin pan with nonstick cooking spray.
In medium nowl, combine flour baking powder, salt, and nutmeg. In a large bowl, using a mixer, beat butter then add sugar and beat on medium until creamy. Beat in egg and vanilla, mixing until smooth. Add flour mixture in three additions and the milk in two additions, beginning and ending with the flour mixture. Mix just until the flour is incorporated and batter looks smooth.
Scoop batter into mini muffin pan (cookie scoop works great). Makes about 18. Bake until tops feel firm and toothpick inserted in the center comes out clean, about 12 minutes. Cool muffins about 5 minutes in the pan; then carefully transfer onto cooling rack.
Melt the 6 tablespoons of butter in a bowl; set aside. In another bowl mix sugar and cinnamon. Roll the muffins in the butter then the bowl of cinnamon sugar. Set on a cooling rack and try and wiat 20 to eat them (they get better as they absorb the butter and cinnamon)!
