     Vegetable Pulao

1 teacup basmati rice
3 tablespoons ghee (clarified butter) or vegetable oil (as a Kosher alternative)
1.5 teacups mixed vegetables (beans, peas, carrots) sliced
1.5 teacups warm water
1 teaspoon garam masala
Salt to taste
Few leaves of coriander (optional)

a) Heat ghee and fry the vegetables for a few minutes. b) Add the warm water to it.
a) Wash and soak rice for 10 minutes. Add this to the vegetable-water mixture. b) Add the garam masala and salt. Mix well and cover with a lid.
a) Let this come to a boil then lower the heat. b) Simmer on very low flame till the rice is completely cooked (approx 7 to 8 minutes).
Garnish with coriander (optional)
Serving Suggestions
Good with various types of raitas
