     Broccoli Soup

Ingredients
3 tbsp olive oil
1 onion
1 green pepper
1 red pepper
3 scallions
6 cups of water
1 potato
1 bag broccoli
1/2 tsp black pepper
 
2 1/2 tsp salt
1/2 tsp dry parsley
1 cup milk or soy milk, optional
Instructions
Saute onion and peppers in oil. Add everything else. Add water and bring to a boil. Lower flame and cook until done. Puree. (add milk if desired)
