In a large pot of boiling salted water,cook string beans until tender.
Drain, return to pot, add 1 tbs olive oil, salt and pepper to taste.
Peel and thinly slice shallots in rings.
In a medium saucepan with a tight fitting lid, heat 2 tbs olive oil
in medium heat.
Add shallots and cover pan.
Reduce heat to medium low.
Cook, stirring occasionally until golden brown (15 minutes or
more)
Combine shallots with string beans.
