Ingredients
2 cups cold water
2 cups flour
2 eggs
salt
Cheese Filling-
1 pound farmer cheese
1-2 eggs
sugar to taste
 
Potato Filling-
Potatoes
Onions
Salt
Oil

Instructions
Beat water, flour, eggs and salt until smooth If you see it's too thick, then add more water. Heat frying pan with oil or crisco until hot. Using a ladle, pour batter into pot. Turn over onto brown paper. If you double this you get 50 to 60 bletlach.
For cheese filling- combine all ingredients For potato filling- Boil potatoes in water. Saute onions in oil. Add onions and salt to mashed potatoes.
Fill each bletlach with filling and fry in oil.
