1 cup coarsely chopped, cooked shrimp, sausage or pork
12 egg roll wrappers
1 Tbs. soy sauce
1/4 tsp. garlic powder
1 beaten egg while
1 tsp. water
oil for deep frying
Instructions
Cook veges until tender in buttered skillet. Stir in meat, soy sauce, garlic powder. Place 1/4 cup of mixture on each wrapper. Seal edges with a mixture of egg white and water. Fry in 1/2 inch hot oil (365 degrees) for 1 1/2 to 2 minutes. Drain on paper towels. Serve at once with sweet and sour sauce or hot mustard sauce.
Folding. Place wrapper in orientation of a diamond shape. Place mixture in center. Fold up bottom point. Fold in right and left points and roll toward top point.
Sweet and Sour Sauce-
1/4 cup apricot preserves
1/2 cup brown sugar
2 Tbs. vinegar
2 Tbs. soy sauce
1/2 tsp. dry mustard
Combine ingredients, and stir over medium heat. Makes 2/3 cup. Keeps one month.
