Preheat oven to 375. Combine cookie mix, 1 egg white, coconut flavor and 1/2 cup coconut in large bowl. Stir. Shape into 1 inch balls, dip into remaining egg and roll in remaining coconut. Place on ungreased sheet, press cherry into center of cookie. Bake for 8 minutes or until light golden brown.
