While your oil is heating to 350 degrees- Begin with cold refrigerated dogs. Mix all dry ingredients together in a large, wide mouth bowl. Add evaporated milk. Batter should be thick consistency. Much thicker than pancake batter.

Then, insert sticks in cold dogs. Be sure dogs are dry so batter will stick adequately. Lightly flour dogs will help batter to stick.

Tip the bowl up to deeply pool the batter. SLAP the dog into the batter not letting go of the stick. Slowly roll from side to side until covered. Hold up dog and let some of the excess drip off.

Submerge the dog in oil while continuing to hold the stick and roll from side to side a few times and let go of the stick. the dogs is done when it floats. -- Batter is also used for fish, onion rings, cauliflower & mushrooms.
