Place the green beans into a medium pot and cover with water.
Bring to a boil over high heat and cook 2-3 minutes until green
beans turn a brighter shade.
Drain and rinse with cold water.
In a large skillet, heat the olive oil over medium heat.
Add the shallots and sliced garlic and cook for 2-3 minutes until
garlic is fragrant but not browned.
Add the chopped peppers and saute for 3-4 minutes.
Add the honey.
In a small bowl, dissolve the cornstarch in the soy sauce and mix
until smooth.
Add to the skillet and bring to a simmer so the sauce thickens.
Transfer green beans to the skillet.
