     Champagne Chicken

Ingredients
Chicken
flour
shallots
brut champagne
2 cups whipping cream
 

Instructions
Dredge chicken in flour. Fry in olive oil and shallots. Brown a little on both sides. Add 1/2 cup brut champagne, simmer about 30 min. Remove chicken and add 2 cups cream and 1/4-1/2 cup champagne. Boil until thickened. Put Chicken on wild rice and butter. Salt
