     Pork Fried Rice

Preptime   1/2 hr.

Ingredients
3 T. vegtable oil
1 small onion, thinly sliced
2 celery stalks, thinly sliced on the diagonal
1/2 in. piece of fresh green ginger, peeled & chopped
2 small carrots, thinly sliced on the diagonal
1 C. cooked roast pork (or chicken) strips
1/2 tsp. black pepper
2 T. soy sauce
3 cups cooked long-grain rice
 
2 eggs, lightly beaten
1/2 tsp. salt

Instructions
Heat 2T. oil in large frying pan. Add onion & ginger. Stir fry 2 mins. Add celery, & carrots & fry for 5 more mins.
Stir in cabbage, pork, pepper soy sauce & rice & cook, stirring constantly, for a further 2-3 mins., or until mix is heated thru. Remove & keep hot.
Heat remaning oil in small frying pan. When it's hot, add the eggs & salt & cook for 2 mins. When the bottome has set, turn the omelte over & cook for a further 2-3 mins. or until it is completely set. Remove & cut into strips.
Transfer rice mixture to a warmed serving dish. Garnish w/ egg strips & serve.
