     Carrot Cake

Ingredients
2 c flour
2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
2 c white sugar
1/2 c veg oil
1/2 c pineapple juice
4 eggs beaten
 
1 c crushed pineapple
2 c grated carrots
Icing- 4 oz cream cheese and 1/4cup butter creamed together.
Add enough icing sugar to make a smooth icing. May
have to add a little milk or pineapple juice.

Instructions
Combine all dry ingredients in a large bowl and mix well.
Beat eggs in another bowl and add remaining ingredients. Add egg mixture to dry and mix well. Put in a greased 9x13 pan. Bake until set in the middle about 40 min or so.
I have found that a small can of crushed pineapple will equal both ingredients required so don't even other to seperate just use a small can in the wet ingedients.
