     The Best Tomato Quiche

Ingredients
3/4 C. all-purpose flour
1/2 C. Cornmeal
1/2 tsp. salt
1/8 tsp. pepper
1/3 C. shortning
4/5 T. Cold water
FILLING- 2 C. chopped plum tomatos
1 tsp. salt
1/2 tsp. dried basil (fresh is always better!)
 
1/8 tsp. pepper
1/2 C. chopped green onions (sub. sweets if needed)
1/2 C. shredded swiss cheese (sub Mon. Jack cheese)
2 T. all purpose flour
1 C. evaporated milk
2 eggs

Instructions
In a med. sized bowl, combine the first 4 ingredients. Cut in shortening until crumbly. Add water, Tablespoon @ a time, tossing with fork till dough forms a ball. Refrigerate for 30 mins.
On a lightly floured surface, roll out dough to fit a 9-in. pie plate;transfer pastry to plate. Trim to 1/2 in. beyond edge of plate; flute edges. Bake @ 375 for 10 mins. Cool completely.
Place tomatoes in the crust; sprinkle with salt, basil, pepper, onions and cheeses. In a bowl, whisk flour, milk and eggs untill smooth. Pour over filling. Bake at 375 for 40-45 mins or until a knife inserted near the center comes out clean.
Serving Suggestions
Goes great with a nice green salad or even a soup!
