     Carrot Cake (or Muffins)

Ingredients
1 and 1/2 cup Flour
1 tsp Baking soda
1 tsp Cinnamon
1/2 tsp salt
1/2 cup sugar
1/2 cup olive oil
2 eggs
2 cups shredded carrots
1 cup applesauce
 
2 tsp vanilla extract

Instructions
Mix dry ingredients, except sugar. Then all other ingredients with sugar. Then mix all together.
Put in either muffin tins or pan for cake. Bake at 350 degrees for 50 minutes.
Optional Icing- 1/3 pkg cream cheese 4 tablespoons margarine or butter 1 tsp vanilla ..... I use 2tsp 1 and 1/2 cups icing sugar. soften cream cheese in micowave ...10 seconds soften margarine then mix add vanilla and icing sugar and spread onto carrot cake or muffins
