     Shrimp Bayou

Ingredients
1 chicken andouille sausage from trader joes sliced into one inch pieces
(1/3 of a leaner and one condiment)
4.5 oz shrimp shelled and deveined (2/3 of a lean)
1/2 cup celery chopped (1 green)
1/2 cup red and yellow bell peppers chopped (1 green)
1/2 cup of chopped tomatoes peeled and chopped (1 green)
1 tsp. cajun seasoning (2 condiments-my recipe follows)
Cajun spice mix-
 
2 teaspoons salt
2 teaspoons garlic powder
2 1/2 teaspoons paprika
1 teaspoon onion powder
2 teaspoon cayenne pepper
2 teaspoons dried oregano
1 1/4 teaspoons dried thyme

Instructions
In non stick saucepan brown andouille and set aside.
Water saute the celery and red peppers until soft.
Add the shrimp, tomatoes, seasoning and reserved sausage.
Cook until shrimp is pink.
Serving Suggestions
1 LG, 3 greens, 2 condiments
