     Shrimp Fried Quinoa

Ingredients
1 cup quinoa
1 1/2 cups water
1 clove garlic, minced
1/4 tsp cayenne pepper
1/4 tsp black pepper
1 tsp salt
6 to 8 oz seasoned meat, chopped (ex. fajita seasoning)
1/2 cup chopped green peppers
1/2 cup chopped onion
 
1/2 cup chopped celery

Instructions
Cook quinoa in water. Add garlic, cayenne pepper, black pepper and salt. Brown meat. Saute green pepper, onion and celery. Combine all ingredients and bake in a 9x13 inch pan at 350 degrees for 20-30 minutes. Strips of red and green peppers can be used to add color by scattering them on top of mixture.
