     Chicken Fajita Salad

2 tsp canola oil (2 Healthy Fats)
1 cup sliced red and green peppers (2 Greens)
9 oz leftover cooked chicken, shredded (1 1/2 Leans)
1 tbsp fresh cilantro leaves (1/8 Condiment)
1/4 tsp minced fresh garlic (1/4 Condiment)
1/4 tsp salt (1 Condiment)
1/4 tsp black pepper (1/2 condiment)
1 tsp ground cumin (1 Condiment)
1/2 tsp chili powder (1 Condiment)
1/2 cup shredded 2% reduced fat mozzarella cheese (1/2 lean)
4 cups lettuce or salad mix (4 Greens)

Heat the oil in a large skillet over edium-high heat. add the peppers, cooked chicken and seasonings and cook for about 4 minutes, or until peppers are tender. Set aside. Divide 2 cups of lettuce per bowl. Top each bowl with half of the chicken and pepper mixture and 1/4 cup cheese. Serve hot.

2 servings with 1 lean, 3 greens, 1 healthy fat and 2 Condiments per serving
