     Giambotta with sausage

Ingredients
1/4 cup olive oil
1 bay leaf
2 cloves garlic chopped
2 onions sliced
2 large potatoes peeled and chopped
1 eggplant chopped
1 zucchini chopped
1 red bell pepper seeded and chopped
salt and pepper
 
1 (28 oz) can fire roasted diced tomatoes
1 cup stock chicken or vegetable
1/2 torn basil
1/2 lb italian sausage ( opt)

Instructions
If choosing to use sausage first brown sausage in soup pot or lg cast iron casserole. remove and set aside. add olive oil, bay, garlic, and onions. let them sweat while you prepare the rest of your veggies. drop into pot as you chop. work in order- potatoes, eggplant, zucchini, and bell pepper. Season with salt and pepper, cover and cook 10 minutes, stirring occasionally. Uncover add tomatoes, stock, and sausage (if used). cook 5 more minutes to heat through, stir in basil.

serve with garlic bread
