     Jambalaya

Ingredients
2 T oil
2 lb skinless bonless chicken
1 lb smoked Italian sausage
2 onions chopped
2-5 cloves garlic minced
3 stalks celery diced
1 1/2 tsp thyme
1 1/2 tsp paprika
1 tsp salt
 
1/2 tsp allspice
1/2 tsp pepper
1/2 tsp cayenne pepper
3 chopped peppers (red & green)
1 can tomatoes (28oz)
2 1/2 c chicken stock
2 1/4 c rice
1 lb shrimp
3/4 c chopped green onions and 1/2 c parsely chopped

Instructions
Brown chicken in oil and remove from pot. Add to pot sausage onioon garlic celery thyme paprika salt allspice black pepper cayenne pepper. Cook stiring often for 5 min. Return chiken to pot. Add peppers and tomato to pot. Add chicken stock. Stir in rice. Bring to a boil. Put into a large dutch oven or roasting pan. Cover and bake for 30 min at 350. Stir in shrimp and green onions and parsely. Bake 5 to 6 min. Serve immediately.
I have done this totally in an electric frying pan with a tight lid. This sauce even would be good for pepper steak. It is quite spice so ajust seasonings to suit your own taste.
