     Blackcurrant Icecream

Ingredients
450g blackcurrants, topped and tailed
200g icing sugar
1/2 to 1 lemon, juiced
300ml cream
 

Instructions
Whiz blackcurrants to a pulp in a blender or food processor. Push pulp through a sieve to obtain a smooth puree, then mix the puree with the icing sugar and lemon juice (start with half the lemon then add more juice to taste).
Whip the cream until softly peaking then fold into the fruit puree. Churn in icecream machine
Cover and leave in the freezer until needed. Let stand at room temperature for a few minutes before attempting to scoop out icecream balls and serving.
