     Kernel Austin Salad

Ingredients
1 T oil
4 c corn canned or frozen (thawed)
1/2 c minced red onion
1 jalapeno pepper seeded and minced
1 tsp minced garlic
1/4 tsp ground cumin
1/4 tsp chili powder
1 c grape tomatoes guartered OR
1 c diced red pepper
 
1 c black beans
2 T lime juice
1 T hickory BBQ sauce (whatever)
1 tsp sugar
salt and pepper

Instructions
Heat oil in a lg non stick pan over med high heat and saute corn for about 8 min till it just starts to char (don't burn) and onions jalapeno garlic cumin chili powder and cook 1 more min.
Transfer to a lg bowl and add remaining ingredients. Mix well and refrigerate at least 2 hours before serving.
Watch the heat on this as it greatly depends on the size of your jalapeno.
