     Fried Chicken

Ingredients
3 cups peanut oil, canola oil, clarified butter or lard
Lee Bros All purpose Fry dredge
3 lbs chicken legs and thighs (6 legs and 6 thighs)
Lee Bros. All Purpose Fry Dredge-
1/2 cup all-purpose flour
3 tablespoons stone-ground oatmeal
2 teaspoons salt
1 1/2 teaspoons freshly ground pepper.
 

Instructions
Fried Chicken- Heat oil in a 12-inch high-sided skillet until a deep-fry thermometer registers 325°. Place fry dredge in a medium bowl. Dredge chicken thoroughly in mixture, shaking off excess.
Using tongs, transfer 3 thighs and 3 legs to skillet, skin side down, and cover. Fry chicken, adjusting heat as needed to maintain temperature, until golden brown, about 6 minutes.
Uncover; turn chicken with tongs, and fry until golden brown all over, about 6 minutes. Turn again, and fry 3 minutes; turn again and fry 3 minutes more. Transfer fried chicken to an ovenproof plate lined with paper towels, and place in a 200° oven to keep warm. Fry remaining chicken, and serve.
Lee Bros All-purpose Fry Dredge- Sift ingredients together twice. Mixture can be stored in an airtight container in freezer up to 2 weeks; let stand at room temperature 1 hour before using.
