3-4 whole chicken breasts, cooked, skinned and chopped
1 head Romaine Lettuce, turn into bite size pieces
1 head Napa Cabbage, cut across the width so it looks curly
3-6 green onions, cut on the diagonal
1/4 lb Snow Peas trimmed
1 can sliced water chestnuts
1 small package (2 oz) Slivered almonds toasted and cooled
1/4 cup sesame seeds, toasted and cooled
1 can Rice Noodles
Dressing
1/3 cup sugar
2 1/2 tsp salt
3/4 tsp pepper
1/2 cup rice vinegar
3/4 cup salad oil
2 TBSP - 1 tsp Sesame oil
Instructions
Mix salad ingredients together. Set aside.
Dressing- Cook sugar, salt, pepper, and rice vinegar until blended.
Cook, than add both oils.
Before serving add the dressing mixture and rice noodles with the
salad.
All the ingredients can be prepared ahead of time and be combined
just before serving.
You should be prepared for each to have at least 2 servings.
