     Cranberry Nectar Coffee Cake

1 egg
3/4 cup apricot nectar
1/4 cup vegetable oil
3/4 cup chopped cranberries
1/2 cup flaked coconut
2 cups flour
1/2 cup sugar
1 Tablespoon baking powder
1 teaspoon salt

Preheat oven to 350 degrees. Grease and flour 9X9X2 inch baking pan.
Beat egg with fork. Stir in nectar and oil. Stir cranberries and coconut into the liquid ingredients. Blend remaining dry ingredients; stir until flour is just not overmix. Pour into baking pan.
Bake for 30-35 minutes. Cut into pieces.
