1 cup of slightly beaten egg whites (7 or 8 egg whites)
1/2 cup applesauce
1/2 cup cooking oil
3 cups of finely shredded carrot
2 cups of powdered sugar, sifted
8 ounces of reduced-fat cream cheese
Instructions
Preheat the oven to 350 degrees. Coat a 15 by 10 inch baking pan with cooking spray. Set aside. In a large mixing bowl stir together flour, brown sugar, granulated sugar, cinnamon, baking powder and baking soda.
In a medium bowl stir together egg whites, applesauce and oil,. Stir into flour mixture. Stir in shredded carrot.
Spread batter into the prepared pan. Bake until a toothpick inserted near the center comes out clean, 25 to 30 minutes. Cool completely on a wire rack.
Ina medium bowl beat together sifted powdered sugar and cream cheese until smooth. Spread frosting over carrot cake- slice into 36 bars.
Note- You can either sprinkle a half cup of chopped walnuts or chocolate chips on the frosted bars. OR mix a cup of diced pineapples into the batter.
