Ingredients
1 pkg. Manicotti Shells
1-2 jars spaghetti sauce
2 eggs
15 oz. ricotta cheese
4 c. mozzarella cheese, divided
1 c. parmesan cheese, divided
1 Tbs. dried parsley, or 1/4 c. fresh, chopped
 

Instructions
Cook manicotti shells according to package directions, drain and lay flat on tin foil to cool. Be careful that they do not touch while they cool, or they will stick together.
Cover bottom of greased baking dish with a thin layer of sauce. In a large bowl, beat eggs, ricotta, 3 cups mozzarella, ¾ cup Parmesan, and parsley.
Fill each shell with cheese mixture and place in baking dish. Top shells with sauce and remaining cheeses.
Cover and bake at 350 for 30 minutes. Remove foil and bake an additional 15 minutes until cheese has melted.
