     Pork Tenderloin with Orange Balsamic Glaze

Ingredients
1 1/2 lb porkt enderloin (2 small)
1/4 c orange juice concentrate
1/4 c apricot jam (I use orange marmalade
1 T balsamic vinegar
1 T olive oil
2 tsp grated orange rind
1 tsp minced garlic
pinch each salt and pepper
3 T chopped fresh parsley optional
 
1/4 c dried apricots

Instructions
Preheat oven to 425. Line a baking pan with parchment paper.
Lightly spray skillet and place on high heat. Sear tenderloins for about 2 min per side or just until browned. Place on prepared pan.
To make the glaze combine juice jam vinegar oil orange juice garli salt and pepper until smooth. Spoon 1/4 glaze over the loins and bake for about 20 min for med. Heat remaining glaze and serve over or beside the sliced loins. Sprinkle with the chopped dried apricots and parsley.
I like to make a little extra sauce. Also really good with chicken. You can add a little hot sauce too.
